With a commitment to traditional methods, native ingredients, and culinary wisdom handed down over time, celebrated Mexican chef, Ray Morales, shares her vibrant cultural heritage with us through her cooking.

 

Morales relies heavily on grilling, steaming, and braising to safeguard the essence of the ingredients and enhance the flavors of each dish. By skillfully layering the fresh components, her culinary creations exude a rich and savory depth.

 

Hallmarks of authentic Mexican cuisine include soft tacos, tortillas made from corn or flour, fresh, white cheese, use of native spices, moles, fresh tomatoes, cooked corn, beans, chillis, avocados and grains. Beef, poultry, fish and seafood all feature in prominently in their dishes.

 

The classic flavors of Mexican cuisine change from region to region, reflecting the ingredients accessible in each region and the historical imprint of Spanish colonization. At Coco Tacos we are proud to present a menu featuring dishes from seven different regions.
